how do you change the icon for an app?

If you already have an icon, right click on it and get info. You will see a small icon at the very top. Click on it and copy it by pressing apple +c.
Go to your desired application, right click and get info. Click on the small icon and press apple+v to paste the new icon.

And if you run into some of the few "stubborn" icons, you can replace the .icns file IN the resources folder (ctrl click, show package contents, resources). It's usually called appicon.icns, but the name changes with various applications. Also, if you want to revert to the original icon when you've pasted over it, you can just higlight it again and go to 'cut.'

You also can make an icon from any picture by using Grab in the Utilities folder.

Fire up Grab, then open a picture. Go back to Grab, and from the Capture menu item, choose Selection. Swipe the crosshairs over that part of the picture that would make a decent icon, then save that picture to the desktop or somewhere you can find it easily. Double-click the Grab picture you just saved to the desktop, which will open it in Preview, then go to the Edit menu and choose Copy.

Use Get Info on a folder or document, activate the Get Info image by clicking on it once, then paste the picture.
