    newbie wants to set black as font default colour
    having issues with setting black as default colour in iWork
    all black is displayed in white
    I tried setting palette colours
    I tried using the colors window

    Have you by chance made any changes in System Preferences, Universal Access? Specifically changed "Black on white" to "White on black" ? Check there to see.
