I have a 3-user Office 2007 Home/Student for PC. Can I use the key to activate my Office 2008 trial?

No, it won't work as the Mac Office 2008 version uses a different key series. You can of course activate your copy of Office 2007 on your Mac if you decide to run it in Windows via a Virtual Machine (Fusion, Parallels, VirtualBox) or from a Boot Camp partition.
