Is your hard drive that you installed formatted properly? Should be formatted as Mac OS Extended (Journaled).

When I copied the Library/Mail folder over it brought over the folders inside my mail account, but not the mail itself. How do I populated the folders with the mail contents?

I would make a backup with SuperDuper or CCC onto another drive, format the original drive as one partition, and then copy the backup back over onto the new partition....

I was looking in System Prefs/Accounts and noticed an account named "_conveyor". I have never noticed it before on any of my Macs. Should I be concerned? For security reasons should I delete it?

Yes, Macs last a LONG time and are not like PC's where you have to keep buying a new one every couple of years. Your new 5K will hold 32gigs of RAM and it's fairly easy to replace it yourself....
