Yup, Boot Camp Assistant checks whether or not it is expired based on the system date and time, so as long as you still have the beta installed you can just set them back a year or so to recombine...

Yeah. Stick in Disk 1 and hold the 'c' key when you boot up... it will boot off of the CD, and from there you can access (if I remember correctly) Terminal, DiskUtility, and some other stuff.
