this is a known issue with all MBP, basically WiFi on MBP normally sux. The best way to fix this is to get something to boost the signal of your WiFi router or move your MBP closer to the antenna.

I think you'll be fine with the 2.5GHz model. There's hardly any difference between 2.5 and 2.6GHz, plus Apple is ripping you off.

I recommend 2.5GHz + 7200rpm HD for you.

You could probably max out the ram and swap the hard drive to a bigger one. I don't think you can upgrade anything else as they are soldered onto the logic board.
