... what the heck does the "i" stand for? iPod, iLife, iMac, iTunes, etc.

That is a good question. I don't think it means anything any more. When the iMac first came out it stood for internet mac.

I think it's just become a sort of apple thing. I think the "i" has probably changed from the original internet meaning, to the word "I" describing one's self. "I" can chat, "I" can live, "I" listen to tunes, etc.
