creating an isolated network..?

I have a MBP & iPad.
On the MBP I have VMWare Fusion with a Windows 2008R2 VM running.
The Windows VM has SharePoint running on it.

I am trying to work out how to set this up so the iPad can access SharePoint without the need to connect to another network.
The scenario I am aiming to solve is demoing SP functionality on the iPad where I am totally offline. I need to create some kind of Ad-Hoc network.

I've tried playing with OSx's "Create Network" but I can't work out how to set up the DNS's on the various devices to make them communicate *or indeed if I am trying to do something that is just no possible).
