I think EvoCam would allow you to do this.
Here's an old Macworld article that talks about possible setups. You'll have to do some research to see if the software still exists and their compatibilities with hardware and your OS version. Edited to add: And this is gonna blow your mind.

Here's another app, keycamx. On google there seems to be a few possibilities and lots of info. I googled for use iSight as spy camera.
