My girlfriend just got a new MacBook with Leopard. Am I able to install it on my Mac Pro using her discs without any problems?

No.

First of all it's against Apple's EULA (read the forum rules about that) and those disk are hardware specific.

Hardware specific = I.E. it'll only install on a specific model.

And read the forum rules:
