can't edit email

I'm an ESL teacher, and I used to be able to edit (correct) messages sent to me by my students; e.g. strike through text, highlight, etc. After upgrading to Mountain Lion I am no longer able to do this. Any suggestions? Many thanks!

He asked which client not which ISP. In other words, are you using the Mac Mail program or some other such as Thunderbird?
