I have connected a Cannon Imagerunner Advance 5051 to my G5 through the ethernet, using an IP address, now I need to set up a desktop folder to receive scans from the IR, how do I do that?

That seems to be an issue on the server side, not the Mac side. Except for creating the folder, which we assume you know how to do. Otherwise you need to give a lot more detail.
