formatting in Mac Mail

All,

How can I find out how to do more typographical formatting in Mail?

Example, change the leading (line spacing)
Add tabs
Indent and set us a fixed width

A good example is when I copy from Word a bunch of text, Mail put additional line spacing in which I can't get rid of, even if I reformat it in Word.
