Deleting a Keyboard Shortcut

I have a question removing a keyboard shortcut from a program. The program in question is Stat/Transfer 11, which is unfortunately a duct taped mess of a windows program that has been shoehorned into OS X.
The problem is that Command-V has been designated to open the viewer, which overrides the paste command. How on earth this could have been overlooked by the programmers is a mystery to me, but there it is.
The standard solution doesn't seem to work, AKA redefining the shortcut under the System Preferences. It doesn't even properly show up under the application list. I believe it's a Carbon app, which may be part of the problem, I don't know.
Does anyone have any suggestions?
