Dock Application Histories

Hey guys,

I got the new Lion OS, loving the changes but now my applications in the dock keep a history of all the recent files i opened. Take for example preview; I open one picture and then when I right click on the dock icon it has it in a list of recent files.
My question is how do i clear these lists of recent items for applications in my dock?
If anyone can help that would be greatly appreciated.
