find out history of when applications/files were opened?

Hi, I'm new to the forum and in a bit of a bind. I let someone borrow my computer when I was on vacation, thinking that I had logged out of my personal administrator account. It looks like I might have been mistaken and I've been lead to believe that this person accessed my personal files (though they deny it). Is there any way to check (using terminal, maybe?) the last time applications like iPhoto or Photobooth were opened during a specified time period and on what dates they were opened? Unfortunately I already (without thinking) deleted the files I was worried about and opened a bunch of others right away so can't check when they were last opened.
