OS 10.4 - DVDs and Logging Out

Two completely unrelated questions:

1. How do I use the shortcut for logging out? I know it is Up, Command, Q, but what is the up key? I've tried everything and can't figure it out.

2. I want to back up my iTunes on DVDs, but I want to be able to add songs to the DVDs whenever I want. What type of DVD do I need (I have a SuperDrive). I'm totally new to DVD-R/Ws so will a standard DVD-RW allow me to put files onto it more than once?

1. That is the Shift Key
2. No not in iTunes. Possibly with Toast you could do a multisession burn but not in iTunes

Don't forget to use the new User Reputation System

What if I just use OS X's burning tool to transfer the files from my iTunes folder to the DVD? Would that work?
