New to Mac. How do I hide the screen when someone walks into the room

You can set Hot Corners to start the screen saver and/or put the display to sleep when you put the cursor in the selected corner (System Prefs>Exposé & Spaces>Exposé. It’s under Active Screen Corners).

Lol at this question. I hope you are asking this because you'll be buying birthday presents or planning a surprise party for someone, and not for some other reason.

Anyway, you can also use ^ arrows or ^ #'s to switch spaces.

You can hide an application by pressing Command-H, or you can assign a corner of your screen to go to the screensaver if the mouse pointer gets near it.

If you have a multi-button mouse you can also set one of the buttons to hide or minimize an app with a single click. CMD + H means one hand on the mouse, one hand on the keyboard and one hand for...uh...well......lets just say it gets awkward.
