Deleting mail 'addresses'

When I'm starting a new email in Mail and I key in the starting letters for an addressee I get an enormous list of previous addressees, many of which are old and defunct addresses. How can I delete these redundant addresses?
I can edit the list of 'previous recipients' which I find in 'Window/ previous recipient'. But, when I try 'Window/address panel' the delete button is greyed out. Anyway that list does not have all the addresses that appear when I start a new email. Any ideas?

That list is just your Address Book, you have to edit it from the Address Book app.
