Running older programs

I have an old Recipe database program that I noticed has a mac version on the install disks. However it wants OS 9 to run in and would not install even though I tried opening "OS 9 classic" on my new PowerBook. It said something about some kind of OS 9 folder not being present.

So..what does this mean? Can I run older programs on my PowerBook or not and if so then how?
