This is probably a really dumb idea, but..........

I have an iMac with Leopard on it. I also have two backups of this volume made with SuperDuper! and the backups made with TimeMachine.

If I reformatted my disk and installed SL on it instead of L, could I then just copy the contents of the Applications folder from one of the backups into the corresponding folder on the new SL? Would that work, or are there other folders like Libraries required by my Applications?

Why don't you just use the Upgrade option when you install Snow Leopard?

Doing a reformat is wholly unnecessary and there is absolutely no reason why you couldn't or shouldn't just upgrade the current OS on your disk.
Then you won't need to worry about copying anything over after you've installed 10.6
