Mac Specs: 2.66 GHz Intel Core 2 duo processor 2.8 GB of memory 300 GB HD and a 1GB ipod shuffle
Do you mean removing the widgets from the page or deleting them off your computer completely?

Mac Specs: Mid '08 MacBook Pro
Hit the + bottom left of Dashboard. X will appear on all widgets, close the ones you do not want on the dashboard. Selecting any widgets from the bottom row will put them on the dashboard.

Select the widget icon and you can deselect the widgets you do not want to be kept available.

That, or hold the Option key while hovering the mouse pointer over the widget to display a white "X". Click the "X" and the widget will be removed from the dashboard. If you want it again later, hit the "+" sign as torchy described, and select it.
