MacBook Pro - Which disc to boot from?

I am going to upgrade the HDD in my MBP. I plan on restoring from Time Machine. I have read that I need to boot from my OS disc after replacing the drive and then restore. My original OS was 10.4.5, and I upgraded to Leopard. Which should I boot from?
