OS 10.5 - Epson Scanner V300

I just installed this new scanner, including driver, to replace the Epson V350 (which I accidentally damaged), however, I am unable to make it the default scanner. When I try to scan from Photoshop, the old scanner, which is now defunct, still shows on the list. What do I need to do to change so that the V300 will be listed? Clearly, you are dealing with a semi-illiterate computer person... :-(
