Are you talking logs that refer to exact operations being performed, or logs of what was running? There are logs on the system that refers to running applications, issues they've had, etc. and all of those are timestamped (unix based logs)
But to my knowledge, like what pigoo3 said - unless there's a keylogger, or some sort of monitoring software I don't know of any logs that would give an exact detailing of what was done, when and where. Now, it would be feasible for someone with administrative access, knowledge and tools to: Figure out roughly what apps were running during a given time frame If the apps generate a history (like safari), the user could then gain access to the history logs - if they've been simply deleted, there are tools that can recover those types of files.
