OS 10.5 - "Save As" command... what gives?

A thirty plus years Windows user... new to OS X (three months)... Love my Mac... but I have some problems with the difference between the two operating systems... mostly I have problem with those that strain logical thought...

Right now I am dealing with the "Save As" command. In the old Windows environment when one selected that command one was given a complete hard drive and folder selectable "explorer" type window to choose the desired location from..

In OS X when one chooses the "Save As" one gets a list of a few locations and if you don't like any of those you don't have a way to go where you want to... (since one can't choose a new location, I wonder where in the world those few locations came from in the first place)

Now this is not very logical and I would expect more than that limitation from those smart people at Jobsville... so I must believe this problem is my own lack of understanding and knowledge, not theirs by any means... so what I am I missing? What do I need to do to see the entire selection of places where I can save my new file to?

I hope someone has an answer.

Click on the arrow next to the name of the file:

The following is the picture of "Save As" in Safari, but it will be typical from most any app. You can then browse in the directory structure to your heart's content. Don't worry, coming from windows, it took me awhile to figure that one out also.
