What language you choose to use may depend on what your goals are. For Mac GUI type programs, the common language to use is Objective-C and the Cocoa framework. If you are just doing command line things, perhaps just the Bash shell scripting capabilities would be fine. CameraTime - Time lapse photography for novice and advanced users.
