I like Textmate, because it makes Python development so easy with Pymate.

But the app I spent most time with and the one that is open 24/7 is Firefox.

Oh there a lot of great apps I like. But I'll vote for itunes. It's just probabily the only one I could really not live without. Plus it works flawlessly for me.

For a non apple one I'm going for mactracker.
