I would like to know if and how i can set Tabs to open in safari instead of a new window?

Go to Safari > Preferences > General and tick "in a new tab in the current window"

Try out this Safari extended, Saft. Really good and allows for that tab thing you mentioned.

Btw, Shorcuts for opening in new tab are:
Command+click opens in new tab.
You can also drag any link to the tab bar to open it there.
Ctrl+Click > Open in New Tab.
