I have a macbook and found some time back that while surfing the internet I could change the test size by using the apple + keys to increase test (Font) size. Is there a way to make this permanate without changing my screen resolution?

If you just mean in Firefox, you could go to Preferences -> Content and click the Fonts button. Select a minimum font size and it will refuse to allow any site to specify a smaller size.
