I suggest you download quicksilver for easy access to all your lovely new programs

Personally i use openoffice rather than microsoft office, great freeware.
gimp is a good alternative to photoshop, and free you'll also need X11 from the apple website if you intend to use this.
You can get loads of great freeware for most your needs at iusethis.com
