I know it's already compiled for 0.19 for Mac OS X but I am having issues with it dropping randomly so I want to compile 0.21 off of githib, I am not afraid of using terminal as I am also a Linux guy and have compiled programs for Linux. But there doesn't seem to be a straight forward tutorial on mac with how to do that

Depends. Usually the same way.
./configure
make
sudo make install

That's assuming it came with a configure file. If not, can you get it from Homebrew or Macports?

Note: the above assumes you have Xcode installed and the commandline stuff for it installed.

Nope no config file or anything I have bash scripts and a couple apple scripts... See here for what program I am talking about https://github.com/opendns/dnscrypt-osx-client I want to see how I can compile it to a .pkg or something

Little beyond my know-how. Check out the scripts, might be setup to use Xcode instead of command line compile.

Homebrew only has dnscrypt-proxy and MacPorts doesn't have any of it.

The GitHub page has xcodeproj files for various parts which should make this easy - either open them in Xcode and build from there or use xcodebuild (see here). Theres even a PackageMaker project file to bring it all together. Now, none of this is going to work if you don't have Xcode installed so you'll need that first.
