Good Tutorial on Quicktime Pro

Is there a good tutorial on QT pro? And how can I be sure I even have it. I've entered the code in Registration, and what's suppose to happen... still opens like QT 7.

The basic help sucks.

I'd like to record movies AS I WATCH them on the screen, is says that's possible but not sure, can it be done? How?

Also, same with audio.
