Mail issue with addresses

Does anyone know how to edit an email address in Mail? When I start typing in someones name it auto fills in the name along with the email address. I used to be able to click on it and choose edit and by clicking it again it would remove the actual address but leave the persons name. It has stopped doing that. Is there a way to get that functionality back?
