VirtualBox comes with an uninstaller. Use that and you should be ok. If it doesn't remove your VMs, they should be in ~/Library/VirtualBox. Can't help with Parallels but I imagine it also comes with an uninstaller. As I understand it, the default location for VMs is ~/Documents/Parallels but I may be wrong (don't use it).
