good apps for drawing diagrams of cells and/or cellular pathways?

I recently switched from PC to Mac, I used to use MS paint for most things because its easy to use. I'm just wondering if there are any applications that would let me construct better scientific diagrams of cells and/or pathways to insert into word documents or print separately for OS X.
