Hi. We send a number of emails related to the same customer or project or both, and would like to be able to select these from a dropdown list in the subject line when creating an email. Does anyone know of a plugin that would make this possible?

I've never heard of a plugin that does this. You might want to try Thunderbird and see if there's a plugin you could use, but I'd say the chances of this happening in Mail are close to zero.
