If I remember correctly, with the Parallels VM window in focus, you would click View and choose "Full Screen", then run your game.

Liquid and computers don't mix. It might seem simple, but we see an incredible amount of people post here about spills. Keep drinks and other liquids away from your expensive electronics!

The VM window is in full screen mode....its only after the game launches that it goes in to a smaller window.....even though I have full screen selected in the game..

Try knocking the screen resolution of the VM down to something like 1024x768 and see if it does the same in-game.
