How do I maintain e-mail drop down list?

When a contact changes their e-mail address, the old address remains in the drop down list in the Mac Mail address TO: box. Also e-mail addresses get added to this list even if the contact is not in the address book (i.e. whenever you send someone an e-mail the address is added to this list).

How can I maintain this list and delete unwanted entries?

In Mail - go to Window on the menu bar, then Previous Recipients. You can delete from there.
