MS Office - Excel Convert EST to PST

Mac Specs: Mac Pro Quad Xeon 2.66GHz 3GB RAM, G4 Quicksilver w/Sonnet 1GHz Encore ST, 1ghz G4 Powerbook

Is there a formula that I can enter that will take NOW() for Eastern Standard Time and convert it to PST? (which would also take into account producing the previous day until 3:01 AM EST)

Any ideas would be appreciated.
