I'm a new Mac user who's attempting a start a journal. I've heard Mac has great apps for journals. Any recommendations?

I really like Macjournal. It's what I'm using now. I don't know if the latest version has tagging, but it's easily the best thing I've used. Go google it.

How about these. None are free, but all have demos:
MacJournal : Mac journaling & Mac blog software.
Simply Journal Shareware Mac - Free Download and Review at Mac Shareware
myJournal Shareware Mac - Free Download and Review at Mac Shareware

Edit:
One more. Offers both non-free and a free version, but the free version is limited

some of the different ones i've looked at seem like they have SO many features. are many of the journal programs hard to adjust to?

Journler is straightforward enough - just read some of the help and look at the examples given in the download
