Okay, Ive spent the whole day converting video, opening FCP and opening FCP only for it to failerat so low quality it might as well be chicken sctratches.

What I am looking for is a straight MKV converter that will convert my MKV anime episodes into something that works with FCP. now, I want HD. I've had my days making AMV's with SD in windows movie maker and I'm done with that. This one i want high quality, crisp video.\

Please, I am frusterated DO NOT send me to links to download free trial's, or paid ones. Ive spent enough money on the mac and all these fancy programs for college. the program can be windows or mac as I have both.

I also welcome my self to the Mac-Forums

Have you tried Handbrake and VLC? Both support MKV video.
HandBrake
VideoLAN - Download official VLC media player for Mac OS X

Depending on how the video is encoded in the MKV container, you may be able to simply remux it into an M4V container losslessly. MP4Tools is great for this. Just use the video passthrough option and the same for audio (unless it is DTS audio). Re-muxing takes a minute or so, versus a couple hours or more to transcode it. It's completely lossless if you are able to use the passthrough options.

Please verify and include the exact model/year of your Mac and OS X version number (available from "About This Mac", then "More Info" on the Apple menu).

Oops. Sorry forgot VLC was just a player. Did you try Handbrake?
