We generate enough of our own video at work to keep me entertained, so I've not tried grabbing clips from YouTube. That said, Perian (Perian - The swiss-army knife of QuickTime components) will play FLV in QuickTime, and if you have QT Pro...you're done. FLV to MP4 doesn't work too well (on my machine), but FLV to MOV is fine.
