iPod Touch - Sync ipod invisibly?

Hi,

I have set up plex on my mac mini, and i dont want it to be disturbed by osx when running. But my tunes music library is set up there too, it is my syncing station for my ipods.
I would like to be able to plug in my ipod touch or iphone, and have it sync according to the instructions i had set up in itunes, but without the itunes window popping up on the screen. a fallback would be if itunes started when i plugged in the ipod and did it's sync thing, but then quit at the end.

can anyone help me do this?
