IPhone via WIFI without SIM?

My understanding is that iPhones also work when connected to a WIFI network. However,
if I get an iPhone 5 before the SIM card comes through, will I be able to get it running to some extent via WIFI?

Yes, it will still be able to connect to your WiFi network and download apps from the App store. And there are several other things you can do. Of course without a sim card the iPhone will not be able to be used as a phone or have cellular communication. It will act and behave just like an iPod Touch.

You can make phone calls with Skype and FaceTime, right?

Yup, and you can use Whatsapp, iMessage or other systems to send "text" messages as well..
