can I spend itunes vouchers in an apple store or on their website to buy hardware like an airport express?

Hi,
Nope I don't think so. They appear to be only redeemable in the iTunes Store.

No. However, Apple gift cards can be used to purchase both hardware and software from either the on line store or a local Apple store. The iTunes gift cards and vouchers are only for that store.

To clarify chscag's answer a little: iTunes credit can be used in any of Apple's software "virtual" stores -- ie, the iBookstore, the Mac App Store, the iTunes App Store, or for anything else iTunes sells or rents (music, movies, music videos, etc). It cannot currently be used to purchase any sort of hardware, or anything from an actual (physical) Apple Store or the online Apple Store (since that sells hardware and boxed software).
