We have two iPhones. One is set up on a mac, the other is a PC user. My phone does a 1 of 6 backup procedure in iTunes but the other is only doing 1 of 3 and completely skipping the "backup" process and only trying to sync. I tried backing up on my mac but the same thing happens. It's only syncing and not backing up.

Is there a setting somewhere that's not allowing the phone to back up?
It's a 3gs running os5 and today we are heading out to get new 4s's. If we can't back up this phone what's gonna happen? Lose everything?

I tried to use a program (phone to mac) but all that does is read the backup file from iTunes so I can't get anything off her iPhone to save.

iTunes > Devices > iPhone > Summary > Backup > Be sure backup to this computer is checked.

Easier way...

Right click (on iPhone in iTunes) -> Backup
