Full back up of iPhone

How do I do a full iPhone back-up? I swear I know it's a newb question, but I have to go back to the store due to the antenna issue. I do not want to lose how I have it set up. I already have the phone backed up, but reloading even with iTunes is a pain in the *****. I mean I'd like to maintain the foldering etc...

To top it off, I have a tough time enough with iTunes. The only product the make I have a tough time with. So any pointers and tips, or even software suggestions would be welcomed.

It gets backed up every time you sync it.

That I do not. I just know when you connect a new iPhone, iTunes asks if you want to use your backup on the new phone.

I know about that backup, and it does back up settings and such, however it does not seem to back up the apps and the settings in each. I know I have to be missing something....
