8 gb and 16gb size wieght differences?

I was just wondering if there is a weight or size difference between the 8gb and 16gb?

There aren't more chips in the 16GB version, they're just denser. However, the increase in weight is minuscule (fractions of an ounce), you won't be able to tell the difference.

I do not think that this will create huge difference. As adding a slim change will not change the weight of iPhone significantly.

But however I would advice you to go as per your requirement. As paying higher for higher capacity is stupidity if you wont able to use it at full.

Must not be much (if any) of a difference since Apple lists only one weight which is 4.7 ounces (133 grams). Size is also only listed once.
