Is there a way through some sort of adapter to connection a thumb drive to the iphone's docking port in order to transfer file off the thumb drive onto the phone?

Nope - you need to sync through iTunes.

(You might be able to do it with jail-braking and so on, but I would imagine it would be well blogged about if there was an existing solution available)
